These may look like Peeps, but they’re actually white chocolate covered mini pound cakes! The perfect quick & easy Easter dessert treat!
I love the look of holiday Peeps marshmallows, but I am not really a fan of the taste (or of marshmallows in general, actually!). To create a fun twist on the Peeps aesthetic, I whipped up these super easy bunny cakes that look just like Peeps, but taste like a delicious mix of buttery pound cake, white chocolate, and sugar sprinkles.
What You’ll Need:
- Frozen Pound Cake (pre-baked)
- Peeps Bunny Cookie Cutter
- Wire Baking Rack
- Ghirardelli White Melting Wafers
- Sugar Sprinkles (pink, yellow, blue, and green)
- Handful of Chocolate Chips
- Optional (for serving display): Shredded Coconut & Neon Green Food Coloring
Start by slicing the pound cake in half as shown with a serrated bread knife.
Use the bunny cookie cutter to cut the pound cake (I was able to get six bunnies from my pound cake).
In the microwave, melt the white melting wafers in 30 second increments, stirring well after each.
Place the bunnies on a wire rack, and spoon the melted white chocolate over the cakes. Gently tap the rack up and down on the counter several times to smooth the finish.
Top the cakes with colorful sugar sprinkles in pastel bright Easter colors to mimic Peeps marshmallows.
In a small piping bag or ziploc baggie, melt a small handful of chocolate chips, and add eyes and a nose on each of the bunny cakes.
Use the neon green food coloring to dye the shredded coconut. To display and serve, top a large serving plate with the green coconut, followed by the bunny cakes and a handful of mini chocolate eggs.
Aren’t they cute? They look just like Peeps (but they taste MUCH better!)!
