Stir well, then microwave for an additional 45 seconds. Stir until the marshmallows are completely melted and the mixture is smooth.
Add the vanilla, salt, and red food coloring. Mix until well combined and uniform.
Lightly spray a rubber spatula with cooking spray and fold in the Rice Krispies into the marshmallow mixture until evenly coated.
Turn the Rice Krispie cereal mixture out into the prepared cake pan. Lightly spray your fingertips with cooking spray and press the mixture into an even layer. Set aside to allow the Rice Krispies to set.
While the Rice Krispies set, line a large baking sheet with parchment paper and set aside. Cut the remaining 4 regular sized marshmallows in half and set aside.
Once the treats are set, carefully remove the Rice Krispies from the pan and cut into 8 wedges using a large knife or pizza cutter.
Melt the white chocolate melting wafers based on the package directions. Dip the larger end of a Rice Krispie wedge 1 inch into the melted chocolate. Lay the dipped Rice Krispie flat onto the parchment lined tray.
Place two rows of the mini marshmallows, cut side down, onto the white chocolate to create the bottom rim of the Santa hat. Dip the cut side of a halved regular sized marshmallow into the melted chocolate, then place on the top point of the Rice Krispie to create the cute little pom-pom!
Repeat this with the remaining 7 Rice Krispie wedges.

These Christmas Rice Krispie treats can be stored in an airtight container at room temperature for up to five days.
CAN I USE THE MARSHMALLOWS I ALREADY HAVE AT HOME?
As long as your marshmallows are not expired, you can use the ones that you already have at home. However, for best results, use a bag of fresh marshmallows when making the Rice Krispies mixture.
WHAT IF I ONLY HAVE LIQUID FOOD COLORING AT HOME?
If using liquid food coloring, you will need to increase the quantity as the color tends to be less vibrant. Start with 10 drops of color and add more as needed!
HOW FIRMLY SHOULD I PACK MY RICE KRISPIES FOR THIS RECIPE?
It’s best to not press too firmly when shaping the Rice Krispies in the pan. You want to press everything together, but you don’t need to compact it TOO much. Pressing too firmly will result in a tough Rice Krispie treat!
CAN I USE WHITE CHOCOLATE CHIPS FOR THIS RECIPE?
White chocolate chips can be used in place of the melting wafers! Just add a teaspoon of vegetable oil or shortening to the white chocolate when melting to help achieve a slightly thinner and smoother consistency.
HOW LONG DOES THIS RECIPE TAKE TO SET?
The time it takes for your Rice Krispies Treats and the white chocolate to set will vary depending on the temperature and humidity in your kitchen. In a cooler, drier environment, the treats will set faster and be ready to enjoy much quicker!
WHAT CAN I MAKE WITH THE LEFTOVER INGREDIENTS?
To simply use up any leftover ingredients, follow the same recipe above – but substitute red food coloring for green food coloring. Use a cookie cutter, make your own cute Rice Krispie Christmas trees to decorate as you please. Everyone will totally adore these festive desserts!
