Customize your own personal-sized quiche for a quick and easy weeknight meal, and have dinner on the table in about 30 minutes! A classic family favorite!Â
The kids are back in school, and Fall Ball baseball is back in session, which means that our weeknights just got super busy again. When our evenings get hectic, my favorite quick and easy weeknight dinner is do-it-yourself personal-sized quiches. Everyone can customize their own quiche to suit their taste preferences, and you’ll still have dinner on the table in around 30 minutes! Even better, make a few extras and you’ll have breakfast for the morning, too!
What You’ll Need to Make Personal-Sized Quiches:
- Eggs or Egg Whites
- Milk or Cream
- Cheese
- Pie Crust
- Meat and/or Vegetable Toppings
- 6″ Shallow Ramekins or Tart Pans
I prefer to use Horizon Organic eggs, egg whites, milk, and cheese in our quiches because I can always trust that Horizon is providing my family with fresh organic products – nothing fake, nothing processed, and nothing complicated. Plus, they taste delicious!
To make the quiches, start by lining each ramekin with a thin layer of pie crust dough and topping it with a handful of shredded cheese. I use refrigerated pre-made pie crust dough to save time and get dinner on the table quickly, but if you have a favorite pie crust recipe that you prefer, feel free to use it!
In a small bowl, mix together eggs and milk. Fill the ramekin 3/4 full with the egg mixture, and top each individual quiche with your favorite toppings – my family likes bacon, ham, spinach, kale, caramelized onions, and a mix of Horizon Organic cheeses. To make our prep process even quicker, I cook up an extra portion of bacon and caramelized onions when I’m cooking our Sunday breakfast, and then they are ready to go on those busy weeknights. Some other great topping options are mushrooms, bell peppers, sausage, tomatoes, asparagus, broccoli, sun-dried tomatoes, artichokes, goat cheese, and feta. I love that everyone in our family can make their own quiche exactly how they want it!
I like my quiches light and white, so I use a mix of Horizon Organic egg whites, mozzarella shreds, and lactose-free reduced fat milk as the base. I pack my ramekin full of spinach and greens before topping it with the egg mixture and a handful of pre-cooked bacon.
Pop ’em in the oven at 350 degrees…
…and bake for about 20-25 minutes until the eggs are set, and the tops and pie crust are lightly golden.

What You’ll Need:
- 2 Refrigerated Pie Crusts rolled dough, not pre-shaped
- 6 Large Eggs
- 1 cup Milk or Cream
- 1/2 tsp. Salt or to taste
- 1/2 tsp. Pepper or to taste
- 1 1/2 cups of Shredded Cheese of Choice
- Toppings of Choice
Instructions:
- Preheat oven to 350 degrees.
- Cut pie crust dough to line each individual ramekins.
- Divide cheese between the ramekins.
- Beat together eggs, milk/cream, salt, and pepper.
- Pour the egg mixture over the cheese in the ramekins.
- Top with your favorite toppings.
- Bake for 20-25 minutes until eggs are set and the tops and crust are lightly golden.
Add a quick side salad, and you’ve got a tasty and wholesome weeknight meal that the whole family will enjoy!
