There’s nothing more delicious than a soft, fluffy Lofthouse sugar cookie! Those soft baked sugar cookies have a taste that’s not quite like any other cookie out there!
Our quick sugar cookie recipe is SO easy to make, and can be made for any special occasions! We made ours with green icing and dressed them up with fun St. Patrick’s Day sprinkles, but you can easily make them for any holiday (I love using pink frosting and and rainbow sprinkles for Valentine’s Day!) or no reason at all!

St. Patrick’s Day Lofthouse Sugar Cookies
Original Lofthouse Cookie Recipe Ingredients:
Cookies:
- Cake Flour
- Baking Soda
- Baking Powder
- Kosher Salt
- Unsalted Butter
- Granulated Sugar
- Sour Cream
- Large Eggs
- Vanilla Extract
- Almond Extract

How to Make Lofthouse Sugar Cookie Recipe:
To make these delicious cookies, start by whisking together your dry ingredients – the flour, baking soda, baking powder, and salt – in a medium mixing bowl, and set it aside.
In the bowl of your mixer, cream your butter and granulated sugar until it’s light and fluffy. You could do this in the bowl of a stand mixer, or you could also use a hand mixer in a large bowl.
Mix in the sour cream, eggs, vanilla extract, and almond extract.
Stir in the flour mixture just until combined.
Divide the dough into two equal proportions. Wrap the dough in plastic wrap and refrigerate for 3 hours.
Preheat the oven to 350°F and line two sheet pans with parchment paper.
Dust your counter with flour and roll the dough to about ½ inch thick.
Using a 3-inch round cookie cutter, cut out the cookies from the dough.
Transfer the cookies onto your prepared baking sheet, about 1 inch apart.
Bake for 8-9 minutes, until the edges turn golden brown. Allow the cookies to cool completely.
To make the frosting, cream the butter in the bowl of your mixer until it’s light and fluffy. Slowly mix in the powdered sugar until all is combined.
Add in the milk, vanilla extract, and almond extract. Mix over medium-high speed until the mixture is light and fluffy, about 1 minute.
If desired, divide the frosting into two bowls and color one of them with the food coloring – we used green and white frostings to keep with our festive theme.
Place the frosting into piping bags with a large straight piping tip.
Pipe the frosting onto the cookies and use a knife to smooth the top of the frosting.
Top the cookies with any fun, festive sprinkles you desire and enjoy!

How do I store the frosted sugar cookies?
For best results, store your cookies in an airtight container at room temperature. If you’re worried about the frosting getting smeared around, you can place a sheet of parchment paper between the layers of cookies.
Can you freeze frosted sugar cookies?
Yes! You can freeze the cookies once they are decorated in an airtight container. They will actually stay good for up to three months!
However, instead of freezing the baked cookies, I recommend that you freeze the cut-out raw cookie dough and the premade frosting separately. Then, whenever you’re in the mood for cookies, simply take out the cookie dough, and bake them as suggested. Allow the dough and frosting to thaw to room temperature, and then bake and decorate your cookies with little effort!
Can you freeze the leftover buttercream frosting?
Buttercream stores wonderfully in the freezer if stored correctly. Make sure to use freezer-safe Ziploc bags to store leftover frosting in, or else the frosting might absorb some unpleasant flavors from the freezer.
The dough seems sticky. Is there an easier way to work with it?
This dough is sticky because it has almost a cake-like texture once it’s been baked. This recipe doesn’t incorporate as much flour as some others, so be sure to work with the dough when it’s completely chilled. You’ll want to sprinkle the work surface, rolling pin, and top of the sticky dough with a dusting of flour to ensure it doesn’t stick.
Tip: My favorite trick is rolling the dough out between two sheets of parchment paper!
Is there a faster way to make these cookies?
If you’re in a pinch for time, you can scoop the dough into about a 1-inch smooth ball and place them onto your cookie sheet. Then dip the bottom of a glass cup or a measuring cup into flour and press the cookie until it’s about a half-inch thick.
Place the cookies in the freezer for about five minutes to prevent them from spreading. Then bake them according to the directions. Easy peasy!
What can I do with the cookie dough scraps after I cut out the circles?
You can combine all the dough and re-roll the dough to cut out more cookies! The more you re-roll the dough, the tougher the cookies get from the gluten strains forming tight bonds. I try to ensure I’m cutting out the cookies as closely together as possible to minimize the amount of times it gets re-rolled.
What type of food coloring do you recommend using for the frosting?
I prefer to use AmeriColor gel food coloring – a little goes a long way! The colors turn out very vibrant without watering down your frosting!
Is there a way to make the sugar cookies colored?
Totally! Just add gel food coloring to the dough until you get your desired color.
What is cake flour, and where do I get it?
Cake flour is a lower-protein flour milled to a finer consistency. It’ll leave you with a fluffier, soft cookie! You can find it near the regular flour in your local grocery store in the baking section.
Can I use all-purpose flour instead of cake flour?
You can use all-purpose flour, but your cookies will not be quite as soft and fluffy as the classic Lofthouse cookies. Cake flour is the best match for getting those super soft sugar cookies!
