This quick and easy skillet haddock is sure to be a new family favorite! A deliciously flavorful and healthy weeknight meal in under 30 minutes!
Haddock is a mild, flaky white fish, with a firm texture that takes sauces and seasonings well. A cousin of the Atlantic cod, haddock is a great choice for families with different flavor palates (it’s especially popular with picky little eaters!). This dinner combines a few of my favorite healthy ingredients into a meal that’s bursting with flavor in less than 30 minutes!
What You’ll Need: 1 pound fresh haddock, avocado or olive oil, bread crumbs, lemon zest, salt and pepper. Cherry tomatoes and radishes also work really well with this dish, but are optional.
Add the oil to the bottom of a cast iron skillet (or oven-safe pan) along with the salt, pepper and lemon zest.
Place the haddock pieces into the skillet, and turn to coat both sides.
Sprinkle the bread crumbs across the top of the fish.
Add the cherry tomatoes and radish slices on top if desired (use a peeler to slice the radish super thin).
Bake for about 9 to 12 minutes or until solid white and flaky. The final cook time will depend on how thick the pieces of fish are.
