First, start by blending the strawberries until they’re smooth. Once fully blended, set them off to the side.
Next, using an electric mixer, whip up the heavy cream on medium speed. Slowly add in the sugar while mixing.
Mix until stiff peaks are just about to form, this usually takes 3-4 minutes.
Now add 3 tablespoons of the pureed strawberries you had set aside.
Continue mixing for 1 minute until the strawberry puree is fully incorporated. For best results, do not over-beat!
